Nuts are great for us. Even though they can be high fat, depending on the nut, it’s not animal fat so has no cholesterol. (That should please my doctor.)

But they cost like crazy. So what’s a healthy body to do?

Toast your nuts. It’s easy.

Line a baking sheet with foil. Spread the nuts on the foil and slide into a 350F oven. It usually takes 10 to 15 minutes, depending on the size of the nuts and the starting temperature. Shake the pan about half way through cooking.

They’re done when getting brown and smelling really good.

Dump them into a cool bowl or pan to stop cooking.

And a warning . . .Brazil nuts are my favorite but they are high in selenium and it’s a case of too much of a good thing.

If you’re trying to cut back on red meat, try using  walnuts in lasagna instead of animal products.
